So I tried this recipe tonight and russell and I agree its the best thing ive ever made. Its a very light and yummy meal. I made orange flaverd carrots to go with it but dont feel like typing out that recipe tonight maybe later. Hope u like this i no we did
Ingredients
2 4-ounce salmon fillets
2 cloves finely chopped fresh garlic
1/4 cup chopped green onions
2 tablespoons reduced-fat cream cheese
1/4 cup baby spinach
1/4 cup chopped button mushrooms
1 tablespoon extra virgin olive oil, Ground black pepper to taste
Method
Cut 4-5 slits across each salmon fillet. Stuff them with garlic and green onions. Spread cream cheese across top, cover with spinach and mushrooms, and drizzle with olive oil. Sprinkle with pepper to taste. Arrange in a shallow baking dish. Bake in a 400 degree oven for 15 to 20 minutes or until fish flakes easily when tested with a fork.
Garlic lovers can use even more garlic on each salmon fillet.
